Adventures in the Kitchen.


Tonight I made tofu and it didn't suck.

I love tofu, I love the taste of it, I just had no idea what to do with it. Look at it in the picture above...how frightening is that? Pretty scary. So, I Googled "easy tofu recipes" and after a lot of clicks and reading some no-so-easy tofu recipes I found one I thought I would like, and could handle making. It was basically a recipe for pasta sauce-which I have ironically been wanting to start making myself!

After work I took my list and stopped at Trader Joe's. I found everything I needed in about two minutes and it cost about $10. Now, what the recipe called for was probably enough to feed 4 people. However, I thought it would be best for me to follow the recipe exactly and have left overs. (I am running the risk that tofu tastes absolutely terrible reheated, but honestly, I don't care. I can cook!)

I taste tested the tofu every two seconds because I have no idea how to cook it and have only seen someone cook it once. (Once I saw someone cook it, it looked easy enough, hence me actually trying to make it.) Well, it was good. I had another successful night in the kitchen. I'm not sure I will make this exact recipe again without adding something more flavorful, but it was pretty delicious. Definitely better than my normal pasta sauce that comes in a jar.

Here's the recipe. Easy enough.

Easy Artichoke and Tofu Pasta Recipe

Ingredients:

  • 1/2 pound pasta
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 pound firm or extra firm tofu, diced
  • 1 14 ounce can artichoke hearts
  • 1 12 ounce can diced tomatoes
  • 1 8 ounce can tomato sauce

Preparation:

Cook the pasta according to the package directions.
In a large skillet, sautee the onion and garlic in olive oil for a few minutes. Add the tofu and cook, stirring, for a few more minutes.
Reduce heat to medium low and add remaining ingredients, stirring to combine. Allow to cook just until heated through.
Toss with the pasta and serve hot.
ta-da! I will work on a better presentation next time :) I'm just taking baby steps over here...

p.s. I made couscous for the first time over the weekend and added sauteed veggies...another good meal. Cheers!
