I think the next cooking utensil I will buy will be a rolling pin. Are rolling pins utensils?
My cooking adventures continue to be successful, I like some things more than others, but last night I made something that I LOVE, so, I have to share.
I made spinach and goat cheese pizza. It was ridiculously easy to make (see recipe below). It was SO good. I couldn’t believe it. I will definitely be making this again.
I also found a new wine that I love. This wine might make me a wine snob. Ok, not really, but this wine is amazing. It’s a kind of wine, not a brand. It’s called Malbec and the grape is from Argentina. Anyway, I don’t know how to describe other than it’s really smooth. It’s not too bitter and not too sweet. I don’t know, its perfect to me. If you like red wine, try it, I can honestly say you won’t be disappointed.
Ingredients
* 1 12 inch prebaked pizza crust
* 2 tablespoons olive oil
* 2 cloves garlic, finely minced
* 1/4 teaspoon crushed red pepper
* 1 bunch fresh spinach
* 1/4 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 4 ounces fresh goat cheese, crumbled
* 6 ounces mozzarella cheese, grated
Method
In a large skillet over medium high heat, sauté garlic and red pepper in olive oil for 3-5 minutes. Rinse, drain and coarsely chop spinach and add to pan. Sauté spinach in olive oil until wilted and liquid has evaporated. Add salt and pepper. Place pizza crust on round baking pan and preheat oven to 425 degrees. Top pizza crust with spinach mixture and sprinkle with cheeses. Bake for 10-12 minutes until cheese is melted and bubbly and crust is crisp.
